The studios

Poker-style live games
Casino Hold'em: you and the dealer receive two cards; five community cards follow. You decide to call (2x ante) or fold after the flop. Optimal strategy is to call with almost everything except very weak hands (roughly 82% of hands), giving a house edge around 2.16% on the ante.
Three Card Poker: bet ante, receive three cards, then play (equal to ante) or fold. Play with queen-six-four or better; edge ~3.4%. The Pair Plus side bet has an edge around 2.3-7% depending on pay table.
Ultimate Texas Hold'em: more decisions and more variance; edge ~2.2% with correct play.
Dice and Asian games
Sic Bo: three dice, dozens of bets. Big/Small (total 4-10 vs 11-17, excluding triples) at 1:1 has a 2.78% edge; most other bets are worse. Super Sic Bo (Evolution) adds random multipliers.
Dragon Tiger: one card each to Dragon and Tiger, higher card wins. Simple and fast, but ties (paid at half) give a house edge of 3.73%.
Game shows
Game shows are wheel- or dice-based entertainment with bonus rounds. They are the fastest-growing part of live casino and consistently the highest-margin.

Lightning and multiplier variants
Evolution's "Lightning" series (Roulette, Baccarat, Blackjack, Dice) adds random multipliers to standard games. The multipliers are funded either by reduced base payouts (Lightning Roulette pays straight-ups at 29:1 instead of 35:1) or by a fee on every bet (Lightning Baccarat and Blackjack charge 20-50% extra on the stake). Overall house edge stays near the base game in Roulette but rises noticeably in Baccarat and Blackjack. Play them for variance, not value.
